Dumpling Soup

I made this soup the other night, and it's perfect for getting through these final cool nights of spring. Recipe below:

Ingredients:

·       Generous amount of sesame oil for sautéing

·       Half onion, chopped small

·       1 stalk of celery, chopped

·       ¼ head of cabbage, chopped

·       2 cloves garlic

·       2 Tbs. ground ginger

·      2 Tbs. soy sauce

·       1 Tbs. brown sugar

·       4 cups vegetable broth

·       2 cups water

·       12 frozen dumplings (I recommend the frozen wantons or pot stickers from Trader Joes)

Method:

·       Bring oil in stock pot up to medium heat.

·       Sauté the onion, celery, and the cabbage until the onion is soft and the cabbage is beginning to wilt.

·       Stir in the garlic and ginger and sauté until fragrant.

·       Add the vegetable stock and water and bring to boil, then turn it to simmer for 10 minutes.

·       Add the dumplings and simmer until the dumplings are cooked through, about 10 minutes.
